Eggplant Pomodoro moringa pasta
The traditional Italian Pomodoro sauce is simply a tomato sauce. That’s it! Curiously “Pomodoro” word means “golden apple” although tomatoes are neither red color nor apples.
Preparation time: 30 min
Ingredients for 2 people
- 4 tomatoes
- Garlic to taste
- 300gr eggplants
- “Waka” Moringa Stenopetala powder to taste
- Grape oil
- Pasta to taste (Spaguettis)
Chop up the garlic, fry them in a pan and add the tomatoes in small pieces. Cook on a slow heat until getting a sauce.
Cut the aubergines and cook them tenderly in a hot pan with grape oil until they soften.
In the meantime cook your favourite pasta “al dente”.
Mix the aubergine paste with the pomodoro tomato sauce and let them together cooking adding salt to taste for a couple of minutes. Serve the pasta on the plates, add the sauce and spread “Waka” moringa Stenopetala powder on it ready to serve.
