Eggplant filled with vegetables and moringa
A few centuries ago northern European people had some rather superstitious ideas about eggplant, including the perception that it could produce insanity — a myth that led to it also being called the “Mad Apple”.

Ingredients for 2 people
- 1 eggplant
- 2 carrots
- ½ onion
- ½ red pepper
- Black olives
- “Waka” Moringa Stenopetala Powder
- Emmental grated cheese
- 1 small can of corn
- Olive oil
Preheat the oven for 10min to 180°C. Delimit the eggplant edges before being introduced into the oven for 15min to 180°C. This help to easier obtain the eggplant meat later. Cut in the meantime the carrots, onion and pepper. Fry first the onions until golden, add then the carrots and pepper and a bit later corn and salt.
Take eggplants out of the oven and get out its meat that shall be mixed with the other fried ingredients, in addition from black olives. Add some more salt if necessary.
Fill in the eggplant outer shell with all the ingredients, cover with grated cheese, introduce again in the oven and grill for 5min. Spread some “Waka” moringa Stenopetala powder on the gratin before serving.
